Work lunch idea: Roasted turkey breast, chickpeas & Greek style salad
If you’re preparing salads in advance I would recommend keeping ingredients separate and in whole pieces. Chop and mix just before eating so your salad doesn’t go soggy.
Ingredients:
🥒Lean turkey breast
🥒Feta
🥒Grape tomatoes
🥒Qukes (baby cucumbers)
🥒Pitted olives
🥒Tin of Edgell snack time chickpeas
🥒Red onion
🥒Red capsicum
🥒Dried thyme, garlic, salt and pepper
Method:
🍅Place turkey breasts onto a baking tray lightly sprayed with olive oil spray. Sprinkle thyme, garlic powder, salt and pepper over the turkey, spray a bit of oil spray over the top, then place in the oven for about 20mins.
🍅When the turkey has cooled, cut into slices.
🍅Put some of each salad ingredient into containers. Keep the ingredients separate and in whole pieces. Sprinkle a bit of thyme + salt & pepper on top.
