Who doesn’t love a hearty #souping meal that supports your waistline and breast health? 🥣 One of my personal faves to share with my patients is this Savory Split Pea Soup from my best-selling book, Power Souping!

I absolutely love having this soup ready in my fridge as a go-to snack! It’s both high in fiber and protein, which makes it incredibly filling!

To make it a complete meal, I add roasted veggies as a side and transform it into a dinner for the entire family to enjoy! #yespeas

Here’s what you need:
· 1 tablespoon olive oil
· 1 onion, chopped
· 2 carrots, chopped
· 2 stalks celery, chopped
· 2 cups dried split green peas, rinsed
· 8 cups water or vegetable broth
· sea salt and pepper to taste

For the soup: Heat the oil in a large pot over medium heat. Add the onion and sauté for 3 to 5 minutes, until softened. Then add carrot and celery and sauté for another 2-3 minutes. Stir in the split peas and water or broth and bring to a boil. Reduce the heat, cover, and simmer for 60 minutes, stirring occasionally until peas are cooked through and soft. Season with salt and pepper to taste.
