Personally, I’ve found the carnivore diet to be incredibly beneficial, and I’m not alone. This is because without carbohydrates, our bodies are much more efficient at utilizing vitamin C. So, the small amount of vitamin C that is in animal flesh is more than enough to keep us at optimal levels.

I typically eat about a pound of ground beef with some beef tallow for lunch, and two striploin steaks for dinner. I aim for a 1:1 ratio of fat to protein, which is around 60-80% of “calories” from fat and the rest from protein. This ratio is important because it optimizes our hunger-signaling hormones. If you don’t consume enough fat, you could actually die of rabbit starvation. It’s also worth noting that meat is very satiating, so it’s important to eat until you’re full.

Now, I know there’s a lot of concern around the lack of fiber in the carnivore diet. But the truth is, fiber is actually indigestible by humans and can be an antinutrient. On this diet, we rely on meat, which is one of the most nutrient-dense foods a human can eat. And speaking of antinutrients, let’s talk about plant toxins. All plants contain chemicals and toxins that are meant to deter predators from eating them. These toxins can be harmful, especially for people with autoimmune conditions. That’s why the carnivore diet is the ultimate elimination diet. It makes it easy to avoid processed foods and plant toxins while providing your body with all the nutrients it needs.
