There are an infinite amount of ways to get creative with building a healthy salad!
Of course, the most important part of any salad is the base lettuce and some high-quality protein and healthy fat. When it comes to lettuce, I suggest going for a darker, leafy green lettuce when you can. Once you’ve decided on your choices, throw in as many of your favorite vegetables as you can find. The more the merrier! Some salad topping ideas include sliced almonds, fresh fruit, herbs, and healthy grains and legumes.
Here’s what’s in the Harvest Salad:
-Spinach
-½ cup cooked quinoa
-½ sweet potato, roasted
-4-5 cooked beets
-1tbsp goat cheese
Here’s what’s in the Salmon Walnut:
-Arugula
-Wild-caught salmon
-¾ cup cherry tomatoes
-¾ cup cucumber
-2 tbsp walnuts
Here’s what’s in the Mediterranean:
-Mixed greens
-Grilled chicken breast
-1 cup bell pepper
-¼ cup red onion
-Olives
Here’s what’s in the Grilled Zucchini:
-Kale
-2 hard-boiled eggs
-¾ cup grilled zucchini
-½ cup corn
-½ large avocado
What to do:
1- On a bed of lettuce, add your cooked protein, healthy fats, & as many vegetables as you want!
