Ingredients:

1 cup mixed sprouts (such as mung beans, lentils, alfalfa, or broccoli sprouts)
1 cucumber, diced
1 bell pepper, diced (any color you prefer)
1 carrot, grated
1 tomato, diced
1/4 cup red onion, finely chopped
Handful of fresh cilantro or parsley, chopped
Juice of 1 lemon
2 tablespoons extra virgin olive oil
Salt and pepper to taste

Instructions:

Rinse the mixed sprouts thoroughly under cold water and drain well.
In a large mixing bowl, combine the mixed sprouts, cucumber, bell pepper, carrot, tomato, red onion, and fresh herbs.

In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.

Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
