Another food challenge in the bag. These themed-days-of-eating are supposed to be strict, but I’m doing them to help me get out of my food ruts! I hope these videos give you some recipe inspiration!

CHIA SEED PUDDING RECIPE:
Just omit the cocoa powder and add a dash of vanilla extract
RAWNOLA:
1 cup nuts
1 cup pitted medjool dates
1/4 cup shredded coconut
cinnamon to taste
pinch of sea salt
process until a crumbly, sticky mixture forms
AVOCADO DRESSING:
2 ripe avocados
1 large handful of cilantro
juice of 1/2 a lemon
1 clove of garlic
pinch sea salt
Blend in a small blender until smooth and creamy, adding a dash of water if you want a thinner texture
RAW WALNUT “MINCE”:
1/4 cup walnut halves
1 large oil-packed sun-dried tomato
dash each: cumin, garlic powder and sea salt
On a cutting board, mince together the walnuts and sun-dried tomato until fine. Stir in the spices and salt.
