4 medium parsnips (washed and peeled)
½ tbsp. coconut oil (melted)
2 cloves of garlic (thinly sliced)
1.5 inches of fresh grated ginger
1 medium white onion (thinly sliced)
1 large Bramley apple (peeled, cored and diced)
1 tsp. ground cinnamon, ⅛ tsp. ground nutmeg
Generous pinch of salt and pepper
1 litre of vegetable stock
